The inspiring Nigella Lawson

Last week I had the great opportunity to be in the audience of the Dutch television show College Tour, in which students get the opportunity to interview a special someone, in this case the fabulous Nigella Lawson.


Nigella is full of wise life lessons and gave everyone valuable advise. She shared her take on life and of course on food. She also shared her famous chocolate olive oil cake! Yummy!

The Chocolate cake recipe is as follow (From her book Nigellissima)

What you'll need:

  • 150 ml regular olive oil
  • 50 gr cocoa powder
  • 125 ml boiling water
  • 2 teaspoons vanilla extract
  • 150 gr ground almonds
  • 1/2 teaspoon of baking soda
  • a tiny pinch of salt
  • 200 gr caster sugar
  • 3 eggs

What you'll need to do:

Preheatyour over to 170 degrees. Grease a 22-23 cm springform with a little oil and line the base with baking parchment.

Measure and sift the cocoa powder into a bowl and whisk in the boiling water until you have a smooth, chocolatey, still runny paste. Whisk the vanilla extract, then set aside to cool a little.

In another bowl, combine the ground almonds with the baking soda and a pinch of salt.

Put the sugar, olive oil and eggs into the bowl and beat together vigorously about 3 minutes until you have a pale-primrose, aerated and thickened cream.

Turn the speed down a little and pour in the cocoa mixture, beating as you go, and when all is scraped in, you can slowly tip in the ground almond mixture.

Pour the dark, liquid batter into the prepared tin. Bake for 40-45 minutes or until the sides are set and the very centre, on top, still looks slightly damp.

Let it cool for 10 minutes on a wire rack still in its tin, and the ease the sides of the cake with a small metal spatula and spring it out of the tin.
