Fall is definitely here, its getting colder, the leaves turn into beautiful colors and the sun isn't shining as long as it used to. The perfect moment to prepare some fab pumpkin soup ;). One of my best friends made me this recipe a few years ago and since then I am completely crazy about it.
All you need:
1 small pumpkin
1ltr. of veggie stock
1 tin of tomato puree
sour cream up to your liking
Mince the pumpkin and onion and heat it together with the tomato puree. After 5 minutes add the stock and leave it boil for 30 minutes. Add the sour cream and mash everything into an actual soup.
Add some mint leaves and feta in a bowl, and pour the soup over, easy as that ;).
